Ingredients

1 1/2 lb rotisserie chicken breast, chopped

~2 medium (221 g) apples, diced

81 g diced onion (sweet or purple), diced fine

204 g diced celery

1 cup (227 g) plain Greek yogurt

1/2 cup (120 g) sweet relish

1/4 cup (60 g) light mayo

1 tbsp (15 g) Dijon mustard

1 1/2 tsp kosher salt

1/2 tsp pepper

1/2 tsp dried dill

  • In a large bowl, combine chicken, apples, onion, and celery.

  • In a separate bowl, whisk together Greek yogurt, sweet relish, light mayo, Dijon, salt, pepper, and dried dill.

  • Pour dressing over the chicken mixture and stir until well coated.

  • Taste and adjust seasoning as needed. Chill before serving, if desired.
