Ingredients

Tacos

Gluten-free tortillas — 6 (≈ 240 g total) (~40 g each; check your package because some are 30–50 g each)

Ground turkey — 454 g (1 lb)

Salt — 6 g (1 tsp)

Black pepper — 2 g (1 tsp)

Dried oregano — 1 g (1 tsp)

Garlic powder — 3 g (1 tsp)

Cucumber, diced — 300 g (about 1 medium)

Tomato, diced — 270 g (1.5 cups)

Pickled onions — 60 g (optional, ~2 Tbsp per taco if using)

Optional toppings:

Extra feta — 30 g (optional, ~5 g per taco)

Pepperoncinis, diced — 30 g (optional)

Parsley, chopped — 8 g (optional)

Yogurt Lemon Dill Sauce

Plain nonfat Greek yogurt — 245 g (1 cup)

Garlic, minced — 6 g (2 cloves)

Feta cheese — 50 g (1/3 cup crumbled)

Lemon juice — 30 g (2 Tbsp)

Fresh dill, minced — 6 g (2 Tbsp)

Olive oil — 14 g (1 Tbsp)

Salt — 3 g (1/2 tsp)

Step 1: Make sauce: Whisk all sauce ingredients in a bowl. Refrigerate while you cook.

Step 2: Portion turkey: Divide turkey into 6 equal balls.

Step 3: Smash onto tortillas: Place a turkey ball on each tortilla and press into a very thin layer covering most of the tortilla.

Step 4: Season: Sprinkle turkey with salt, pepper, garlic powder, oregano (divide evenly across tacos).

Step 5: Cook: Heat cast iron/griddle over medium-high; spray with oil. Cook tortillas meat-side down 2–3 min until browned. Spray tortilla side, flip, cook 1–2 min more.

Step 6: Serve: Top with sauce, diced cucumber, diced tomato, pickled onions, and any optional toppings.
