Ingredients
Step 1: Make sauce: Whisk all sauce ingredients in a bowl. Refrigerate while you cook.
Step 2: Portion turkey: Divide turkey into 6 equal balls.
Step 3: Smash onto tortillas: Place a turkey ball on each tortilla and press into a very thin layer covering most of the tortilla.
Step 4: Season: Sprinkle turkey with salt, pepper, garlic powder, oregano (divide evenly across tacos).
Step 5: Cook: Heat cast iron/griddle over medium-high; spray with oil. Cook tortillas meat-side down 2–3 min until browned. Spray tortilla side, flip, cook 1–2 min more.
Step 6: Serve: Top with sauce, diced cucumber, diced tomato, pickled onions, and any optional toppings.
