Spicy Feta Chicken Crunch (Hot Pita Filling)

Ingredients

2 chicken breasts (boiled, seasoned, and shredded)

200 g cottage cheese

60 g feta cheese, crumbled

1 red onion, finely diced

1 red bell pepper, finely diced

1 tsp harissa paste

1 tsp honey

Juice of ½ lemon

Small handful fresh parsley or basil, finely chopped

1 tsp garlic powder

1 tsp onion powder

Salt + pepper, to taste

Step 1: Boil chicken breasts until fully cooked (internal temp 165°F).
Step 2: Season the chicken with garlic powder, onion powder, salt, and pepper, then shred.
Step 3: Add the cottage cheese, feta, harissa, honey, lemon juice, and diced red onion to the hot shredded chicken.
Step 4: Heat and stir until everything is well melted and creamy (the feta will break down into the sauce).
Step 5: Mix in the red pepper + fresh herbs and stir until combined.
Step 6: Store in an airtight container for up to 3 days.

How to Serve

Best served hot, stuffed inside a toasty pita 😍
