Ingredients

Bowls:
•Chicken breast (thin sliced) — 680 g
•Fajita veggie mix (peppers/onions) — 600 g
•Cooked jasmine rice — 480 g
•Olive oil — 10 g
•Chipotle seasoning (or taco + chipotle powder) — 8 g
•Lime juice — 30 g
•Salt/pepper — to taste

Street Corn Salsa:
•Corn — 240 g
•Nonfat Greek yogurt — 200 g
•Cotija (or feta) — 40 g
•Lime juice — 15 g
•Chili powder — 2 g
•Cilantro — 10 g (optional)

Optional toppings: shredded lettuce, pico, jalapeño, hot sauce (not included in macros)

Step 1: Cook rice.

Step 2: Sauté chicken + fajita veggies in a hot skillet 8–10 min until done.

Step 3: Stir together street corn salsa.

Step 4: Build bowls: rice + chicken/veg + salsa + toppings.
